A great way to enjoy a salad with a fraction of the work.
Ingredients
- 2 – 3 handfuls of spinach
- 2-3 handfuls of other favorite green (romaine lettuce, arugula, kale)
- ½ cup cucumber
- ¼ cup red pepper
- ¼ up green pepper
- ½ cup red cabbage
- 1 tomato
- 1 tbs tahini
- 1 tbs lemon juice
- 1 tbs apple cider vinegar
- ½ tsp sea salt
- ½ clove garlic
Directions:
- Put all ingredients into a food processor; chop until blended and a bit chunky. If it becomes too liquid, add more greens. As with all salads you can pick and choose your favorite ingredients.
- Serve and enjoy.
