Blended Salad

A great way to enjoy a salad with a fraction of the work.

Ingredients

  • 2 – 3 handfuls of spinach
  • 2-3 handfuls of other favorite green (romaine lettuce, arugula, kale)
  • ½ cup cucumber
  • ¼ cup red pepper
  • ¼ up green pepper
  • ½ cup red cabbage
  • 1 tomato
  • 1 tbs tahini
  • 1 tbs lemon juice
  • 1 tbs apple cider vinegar
  • ½ tsp sea salt
  • ½ clove garlic

Directions:

  1. Put all ingredients into a food processor; chop until blended and a bit chunky. If it becomes too liquid, add more greens. As with all salads you can pick and choose your favorite ingredients.
  2. Serve and enjoy.
